【美味香草】青咖哩雞 - Green Curry Chicken

友人從泰國旅遊回來帶來了手信 - 青咖哩醬料。喜歡茄子的我,自然不會錯過機會將它來煮青咖哩雞。和常享用的的紅色咖哩比較,青咖哩少了辛辣的味道,但多了香草的清香味。材料中的九層塔自然功不可沒,少了它味道就會遜色多了。

材料 Ingredients:
Lobo 青咖哩醬料50克50g Lobo Green Curry Paste
鸡腿2只,斩件2 Chicken Drumstick, chopped into serving pieces
食油1茶匙,斩件1 Tsp Cooking Oil
红洋葱1粒,去膜切片1 Red Onion, Peeled and sliced
椰浆150毫升150ml Coconut Milk
热水1公升1 Liter Boiling Water
茄子1条,去蒂切塊1 Long Shape Eggplant, Cut into serving pieces
九层塔叶,20克30g Basil Leaves
泰國瘋柑葉5片,切絲5 Kaffir Lime Leave, Sliced Finely
紅辣椒1條,切段1 Red Chili, Cut into pieced
青辣椒1條,切段1 Green Chili, Cut into pieces
调味料 Seasonings:
1 茶匙鱼露1 Tsp Fish Sauce
少許鹽Some Salt
少許糖Some Sugar
做法 Method:
熱鍋加入食油,爆香紅洋蔥,炒至半透明。加入青咖哩醬料和椰漿炒勻,加熱至椰漿開始微滾。加入雞肉和熱水,翻炒至雞肉變色。
加入茄子,繼續煮至茄子軟為止。加入辣椒、九層塔葉和瘋柑葉攪勻。加入調味料試味,即可上桌享用。
