延续着单蛋黄莲蓉月饼, 这月饼纯用莲蓉为馅料。做法方面和前者几乎大同小异,可以参考前者的制作方法。不过在这里省了咸蛋黄和其所需要的步骤。另外我也把在烘烤时涂上蛋黄的步骤也省略掉, 保留了原有漂亮的图案。 至于其馅料的份量则改为每份100克。 以下的份量可制作大约十粒的月饼。 |
材料 Ingredients:
烘烤月饼皮 | |
(A) | |
220克 糖浆 | 220g Golden Syrup |
60克 花生油 | 60g Groundnut Oil |
1/2茶匙 枧水 | 1/2 Teaspoon Alkaline Water |
(B) | |
300克 低筋面粉,筛过 | 300g Low Gluten Flour,Sieved |
馅料 (Filling) | |
1000克 莲蓉馅,分成每份100克,搓圆 | 1000g Lotus Paste,Divide 100g Portion, Shaped Round |
后记
莲蓉月饼在烘烤出炉过了大约三天之后, 就开始“出油”了,这时候可慢慢品尝了。 |
