梅干菜五花肉是我们俩喜爱的食物之一. 我最喜欢那咸咸的梅菜, 加上带油的猪肉, 吃起来非常的美味. 常常在外有的经济饭挡口会发现此菜肴. 梅干菜经加工用盐腌制, 购买时其本身会富有大量的盐粒, 所以有时候也被称盐菜. 因为梅干菜是腌制品, 对身体健康不太好, 所以不可以常吃. 以下的煮法, 是经过两位母亲的口传. 下回有机会亲自下手, 在和大家分享其烹饪过程. |
材料 Ingredients:
咸梅干菜 600克 | Salted Preserved Vegetables 600g |
甜梅干菜 200克 | Sweet Preserved Vegetables 200g |
五花肉 200克, 切块 | Pork Belly 200g, Sliced |
蒜头米 2 汤匙 | Grated Garlic 2 Tablespoon |
热水 160ml | Boiled Water 160ml |
调味料 Seasonings:
1/4 茶糖 | 1/4 Teaspoon Sugar |
做法 Method:
- 清洗咸梅干菜
- 首先将梅干菜用清水洗两三遍,一来把身上的盐清洗,二来降低其咸度。
- 如果觉得梅干菜还是很咸的话,可以煮锅热水将它煮大约五分钟 清洗甜梅干菜
- 重复以上步骤一和二。 烹饪
- 将以上的梅干菜切小块。
- 锅加热后加入两汤匙食用油后,接着爆香蒜头米。
- 趁着蒜头米煎成金黄色时,加入五花肉。
- 将肉炒成九成熟时,加入以上的梅干菜, 继续炒。
- 再来加入调味料。
- 接着加入半杯热水,焖煮大约30分钟,直到肉软为止,就可以上菜了。
提示 Tips:
- 如果没有甜梅干菜,就用咸梅干菜代替。
- 如果有烧肉的话, 可以替代以上的五花肉, 就变成"梅干菜烧肉", 其味道更胜一筹.

我很喜歡梅乾菜的味道,
只是每次做多了就得吃好幾天,
做少的話又不好拿捏份量,
久了我都快忘了這道好菜了呢! XD
嗨Mimi, 其實這梅乾菜可以冷凍收藏的。因爲每一次煮的話,清洗梅菜很耗時,所以可以一次煮大分量,吃不完的收藏在幾個容器然後冷凍。下次要吃的時候再將它們解凍。在紐約的唐人街應該可以找到梅菜吧。^^
Hi dolphing Actaully I like this dish very much. But one difficulty that i faced when cooking is I do not know how to choose a fresh meat/ vege or good ingredient.I am sure that the ingredients is very important and it can affect the taste of the food. If your website can teach us how to choose cooking ingredients, then it would be perfect. Of course, this is my suggestion only. :p

Thanks for your hints. ^^ I would absolutely glad to share more not only cooking idea, but also how to choose the right ingredient. I will take note this . I haven't cook this Preserved Vegetables with Pork Belly before but I would like to do so. I will capture more detail when I prepare this dish in future. ^^
